Hi there,
This issue's tip: stop scooping your flour
Dipping the measuring cup into the bag packs flour down, and you can end up with much more than the recipe meant. Fluff the flour, spoon it into the cup, and level it off with a knife. Or weigh it if the recipe gives grams.

Baking science: why chill cookie dough?
Cold butter melts more slowly in the oven, so cookies set before they spread. Chilled dough also tastes richer.
Reader question
"Can I bake a 9-inch round cake recipe in a 9 by 13 pan?" Yes, but you'll need to scale it up by almost double. Our pan converter does the math.
Happy baking,
