Measure flour correctly

Spoon, level, or weigh.

4 min read

Scooping flour straight from the bag packs it down and can add a lot of extra flour, which makes baked goods dry and dense.

Spoon and level

  1. Stir or fluff the flour in its container
  2. Spoon it into the measuring cup until heaped
  3. Level it with the back of a knife
  4. Don't tap or shake the cup

Even better: weigh it

A kitchen scale is the most accurate way to bake. Many recipes list grams, and weighing means fewer dishes too.
