Room-temperature ingredients

Why recipes ask for them.

4 min read

Butter, eggs and dairy at room temperature blend more smoothly and trap air better, giving lighter cakes and cookies.

Quick ways

  • Cut butter into small pieces; it softens in about 20 to 30 minutes
  • Put whole eggs in a bowl of warm tap water for 10 minutes
  • Softened butter should dent when pressed but not look greasy
  • Don't melt butter unless the recipe says to
